Ingredients
- 2 ยพ cups gluten-free 1:1 baking flour
- 1 cup dairy-free butter or coconut shortening (softened)
- 1 cup maple syrup (room temperature)

- 2 ยฝ tsp natural peppermint flavoring
- โ cup dairy-free white chocolate chips
- Crushed candy cane pieces
Directions
In a mixing bowl, beat together the butter (or coconut shortening), maple syrup, and peppermint flavoring using a hand mixer for about 1 minute.
- In a separate bowl, whisk together the gluten-free flour and matcha powder until no clumps remain.
- Combine wet and dry ingredients and mix until a thick cookie dough forms.
- Divide the dough in half, wrap each portion, and chill in the fridge for about 30 minutes.
- Remove from the fridge and roll out between parchment paper using a rolling pin. (Let sit at room temp if itโs too firm.)
- Roll the dough to ยผ inch thickness and cut into desired shapes (yields ~24 cookies depending on size).
- Place cookies on a parchment-lined baking sheet and bake at 325ยฐF for 15โ17 minutes.
- Let cookies cool completely before decorating.
- Melt white chocolate chips and drizzle over cookies. While chocolate is still wet, sprinkle crushed candy canes on top.
