- 🌱 No butter, no junk. Just delicous, nostalgic joy
Ingredients
-
1 c white chocolate chips (vegan if desired)
- ¼ c natural cashew butter
- 1 tsp vanilla extract
- ¼ tsp salt
- 4 c Chex cereal (gluten-free if desired)
- ¼ c miniature Christmas chocolate candies, plus more for garnishing
- 2 tbsp assorted Christmas sprinkles, plus more for garnishing
- 1 c confectioners’ sugar
-
1 tbsp Matcha Nude
Directions
- Combine the white chocolate, cashew butter, vanilla, and salt in a double boiler (a small heatproof bowl set over a pot with about 1 inch of simmering water).
- Simmer the water and stir the mixture until smooth, creamy, and fully combined.
- Place Chex cereal in a large bowl and pour the melted chocolate mixture over the top. Stir gently to coat.
- Spread onto a large sheet tray. Sprinkle chocolate candies and sprinkles across the top. Let sit for ~10 minutes until tacky but not fully hardened.
- Transfer to a large container.
- In a small bowl, mix confectioners’ sugar and matcha. Sift over the cereal.
- Cover and shake until evenly coated. Break up any clumps by hand.
- Chill in the fridge for at least 1 hour.
- Before serving, garnish with extra candies and sprinkles.
- Store leftovers in a sealed container at room temp for several days.
Recipe Note
Microwave Directions:
Melt white chocolate, cashew butter, vanilla, and salt in the microwave in 15–30 second bursts, stirring in between. If it doesn’t smooth out, add 1 tsp coconut oil.
