Ingredients
- Β½ c water
- ΒΌ c local honey
- 6 ripe, fresh figs
- 1 c unsweetened milk of choice (vegan if desired)
- 1β3 tsp fig infused honey syrup

- Fresh fig half, for garnish (optional)

Directions
To make the fig infused honey syrup, start by cutting the figs into quarters. Combine the water, honey, and figs in a small pot. Bring to a low boil, then reduce to a simmer. Gently mash the figs with a fork to help them release their flavorful juices. Simmer for about ten minutes, until the liquid is pink in color and thick enough to coat the back of a spoon.
Strain the fig infused honey syrup through a fine-mesh sieve. Save the figs and use them to stir into oatmeal or yogurt, or as a topping for ice cream.
Pour the fig infused honey syrup into a jar or container with a tight lid and store it in the refrigerator for up to a week.
To make the matcha latte, heat the milk in a saucepan or in the microwave. Stir in 1-3 tsp fig infused honey syrup, sweetening it to taste.
Make the matcha shot by whisking the matcha with a splash of hot water.
Pour the sweetened milk into a mug, top with the matcha shot, and enjoy.
Recipe Note
Vegan Version:
Donβt eat honey? No problem. You can still make this cozy matcha latte by using a fig simple syrup instead of a fig honey syrup. Just substitute ΒΌ cup granulated sugar for the honey, then follow the same directions.
Recipe Notes:
The final flavor and color of the fig infused honey syrup will depend on the size and ripeness of the figs. For small figs or ones below peak ripeness, use 8β10 instead of 6. For a more strongly flavored syrup, add an additional splash of water and simmer for longer. If the syrup thickens when chilled, stir in 1β2 tsp water to return it to a pourable texture. Note that dried figs will not work in this recipe.
