There’s something wildly satisfying about biting into a frozen treat that’s as pretty as it is delicious—and these Matcha Ice Cream Bars are exactly that. Smooth, dreamy, and laced with a little green goodness, they’re the perfect summertime (or anytime) treat.
They’re dairy-free, sweetened naturally, and dipped in a velvety matcha white chocolate shell that makes them feel like a fancy store-bought dessert… but better. Why? Because you made them. Ingredients
- 1 cup raw cashews (soaked in hot water for 1 hour)
- 1 ½ cups full-fat coconut milk

⅓ to ½ cup honey or maple syrup (your call on sweetness!)

1 tbsp + 2 tsp Matcha Nude matcha
- 2 tsp vanilla extract

1 ½ cups dairy-free white chocolate chips

1 tsp coconut oil

Directions
Soak the Cashews: Let them hang out in hot water for at least an hour, then drain. They’ll be nice and soft—perfect for blending into creamy goodness.
Blend the Base: In a high-powered blender, combine the soaked cashews, coconut milk, 1 tbsp matcha, honey (or maple syrup), and vanilla. Blend on high for 1–2 minutes until ultra-smooth.
Freeze into Bars: Pour the mixture into 8 silicone ice cream bar molds. Pop them into the freezer for at least 6 hours (overnight works great too).
Make the Coating: In a heat-safe bowl, combine the white chocolate chips and coconut oil. Melt in the microwave in 30-second increments or use a double boiler until smooth and glossy.
Matcha-ify Your Chocolate: Sift in the remaining 2 tsp of matcha powder and whisk until fully incorporated - aim to dissolve any clumps the best you can. 💚
Set + Store: Place the dipped bars on a parchment-lined tray and let them set. Store in the freezer for those moments when you need a cool matcha treat ASAP.
