Let’s talk banana bread but take it up a notch. Lanina, the kitchen magician behind Colorful Superfoodie, created this loaf that brings cozy to your kitchen with a roasty twist: organic hojicha. It’s gluten-free, banana-sweet, and gently spiced. Basically it is everything we want with a warm mug in hand when the weather says “stay in.”
We’re talking soft and fluffy, hints of cinnamon, and just enough hojicha to wrap you in a hug without giving you a caffeine rush. This loaf is everything. And yes, that banana-on-top moment? Pure ✨drama✨ in the best way.

Ingredients

2 cups gluten free 1:1 flour

1 cup almond flour

3 very ripe bananas(plus one for topping)

2/3 cup coconut or almond milk

2/3 cup coconut sugar

1-2 tbsp Hojicha Powder

1/4 cup ground flax

1/2 cup avocado oil
-
1 1/2 tsp baking soda

1 tsp baking powder
-
2 tsp cinnamon

2 tsp vanilla extract
Directions
First in a bowl, whisk together the gluten free flour, almond flour, coconut sugar, Hojicha powder, ground flax, baking soda, baking powder, and cinnamon. Once the ingredients have been whisked well and there are no clumps, set the bowl aside.
Mash 3 ripe bananas well and combine them in a bowl with the coconut milk, avocado oil, and vanilla extract.
Combine the dry and wet ingredients together and mix until everything is well incorporated and there are no lumps.
Pour the banana bread mixture into a lined loaf pan and smooth out the top.
Slice a banana in half longways and place the 2 halves on top of the banana bread batter for a pretty look and to add more delicious banana flavor.
Bake the banana bread for 1 hour at 350 degrees.
Once the banana bread is done baking, turn off the oven and crack the oven door while leaving the banana bread still in the over for 15 minutes.
Take the banana bread out of the oven and place on the counter to cool down completely before slicing.
Once the banana bread has cooled down, carefully slice the banana read into slices as thick as you prefer! Enjoy your bread with a delicious Hojicha latte or your favorite warm drink.
You can store the banana bread in an air-tight container in the fridge for up to 5 days or freeze for enjoying later!
