Directions
In a small bowl, whisk together the coconut yogurt and matcha powder until smooth and evenly green.
Optional: Add a small drizzle of maple syrup or honey for extra sweetness.
Line the bottom of two serving glasses or dessert cups with 2 gingersnaps each.
Divide the matcha yogurt mixture evenly between the two glasses.
Top each serving with 2 more gingersnap halves for a bit of crunch.
Chill in the fridge for about 1 hour max, just enough to set, but not so long that the cookies dissolve.
