Matcha Heart Thumbprint Cookies
INGREDIENTS
- 1 cup of all-purpose flour (sub 1:1 GF flour)
- 1 tablespoon Matcha Nude
- 1/2 cup of unsalted butter, softened at room temperature (sub vegan butter - we love Miyokos)
- 1/3 cup of strawberry jam, warmed if needed
- 1/3 cup of powdered sugar
- 1 large egg yolk, at room temperature
- 1 teaspoon of vanilla extract
HOW TO:
1. Preheat your oven to 350°F and line a baking sheet with parchment paper and set it aside.
2. In a small bowl, combine the flour and matcha powder. Set aside.
3. In a large mixing bowl, use an electric hand mixer to beat the softened butter until creamy and pale. Add the powdered sugar and cream together until smooth.
4. Add the egg yolk and vanilla extract to the butter-sugar mixture. Mix until well combined.
5. Gradually add the flour and matcha mixture to the wet ingredients, mixing on low speed until the dough just comes together.
6. Use a 1-1.5 tablespoon scoop to form round dough balls. Place them on the lined baking sheet with about 1.5 inches of space between each ball.
7. Flatten the dough balls slightly with your fingers to create a flat surface. Use your thumb or the back of a ¼ teaspoon to press a heart design in the middle of each dough ball. Fill the heart-shaped indentation with about ½ teaspoon of warmed strawberry jam, spreading it around to fill the entire shape.
8. Bake the cookies for approximately 10-11 minutes or until the surface looks dry and puffy. Allow the cookies to cool on the baking sheet for at least 10 minutes before transferring them carefully to a wire rack to cool completely.
This recipe makes 18 cookies.
For storing, keep these delightful cookies fresh by placing them in an airtight container at room temperature for a maximum of 3 days. Please note that extended storage might lead to softening due to the jam's moisture. If you wish to savor the goodness later, these cookies are freezer-friendly for up to 1 month. Simply secure them in an airtight container, a freezer bag. When ready to enjoy, thaw them at room temperature for a few hours.
