I Want to Like Matcha… But It Tastes Bitter (And How to Make It Smooth + Delicious)

First of All, You’re Not Wrong

If your matcha tastes like regret… you’re not alone. So many people want to love matcha, but one bitter, clumpy sip and it’s back to your oat milk latte. But here's the thing: matcha isn’t supposed to taste like that.

Let’s Break Down Why Matcha Gets Bitter

If your matcha tastes bitter, sharp, or like you licked a plant stem, one of these common culprits is likely to blame:

💧 Your Water’s Too Hot

This is the most common reason matcha tastes off. Boiling water scorches the tea, bringing out bitterness and ruining its smoothness.

Fix it: Heat your water to around 160–176°F (not boiling!). That’s the sweet spot for mellow, flavorful matcha.

🍵 You’re Not Whisking Properly

Just stirring with a spoon won’t cut it. If your matcha is clumpy or doesn’t mix well, it can taste weird and textured.

Fix it: Use a bamboo whisk (or a milk frother) and whisk in a W shape to create a nice froth and even texture.

💚 You’re Using Low-Quality Matcha

Not all matcha is created equal. Lower-grade matcha (often culinary grade or very old product) can be dull, bitter, and just... bleh.

Fix it: Use high-quality premium matcha, like our Premium Grade. It’s smooth, vibrant, and totally sippable on its own, or with your fav plant milk and sweetener.

🍯 You Need to Add Sweetener

Matcha is naturally rich and umami-forward. That doesn’t mean it has to be bitter, but a touch of sweetness can make it truly magical.

Fix it: Try adding a splash of maple syrup, honey, or a medjool date to your latte. This isn’t cheating, it’s customizing.

Still Not a Fan? Try This.

If straight-up matcha isn’t your thing (yet), start with a recipe like:

The goal isn’t to force yourself into loving it like a green tea Stockholm Syndrome. It’s to find the version of matcha that feels good to you.

You Deserve Better Than Bitter

Matcha should feel smooth, creamy, calming, not like punishment in a mug. If it tastes off, it’s not you. It’s the matcha (or how it’s made).
