Ingredients
- 1.5 lbs yellow or gold potatoes, cut into bite size pieces
- 2 stalks celery, finely chopped
- 3 green onions, thinly sliced
- ¼ cup chopped fresh parsley
- Optional: a handful of chopped fresh dill or chives for extra herbiness
- ⅓ cup mayo (store-bought, homemade and/or vegan)
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar or lemon juice
- 1 tsp Matcha Nude
- ½ tsp garlic powder
- ¼ tsp sea salt (adjust to taste)
- Cracked black pepper to taste

Boil the potatoes: Add potatoes to a pot of salted water. Bring to a boil and cook until fork-tender (about 10–12 mins). Drain and let cool slightly.
Whisk the dressing: In a small bowl, mix mayo, mustard, vinegar/lemon, matcha, garlic powder, salt, and pepper until smooth and vibrant.
Mix it up: In a large bowl, combine cooled potatoes, celery, green onions, and herbs. Pour the dressing over and toss gently to coat.
Chill (literally): Refrigerate for at least 20 mins to let the flavors mingle—or serve it warm if you just can’t wait (no judgment).
