- 8 tbsp unsalted butter, softened (we love Miyoko's Creamery dairy-free butter)
- 2 eggs
- 1 tsp peppermint extract

- 1/2 tsp vanilla extract
- 3 tbsp tapioca starch
- 1/4 cup powdered sugar
- Red heart sprinkles
Directions
Preheat & Prep: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Mix the Dough: In a large bowl or stand mixer, combine the cake mix, butter, eggs, peppermint extract, sifted matcha powder, and vanilla extract. Mix on low until fully combined.
Sugar Coating: In a separate bowl, whisk together tapioca starch and powdered sugar.
Form Cookies: Roll the dough into 14 evenly sized balls.
Coat in Sugar: Roll each ball in the sugar mixture, ensuring an even coat, and place them on the prepared baking sheet with space in between.
Add a Heart: Gently press a red heart sprinkle into the center of each cookie.
Bake: Bake for 13 minutes (10 minutes for smaller cookies). The centers should remain soft.
Cool Down: Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
