Ingredients
For the Matcha Shortbread Cookie Layer:
- 2 cups almond flour
- 3 tbsp coconut flour
- 1/4 cup melted coconut oil
- 1/3 cup maple syrup
- 2-3 tsp Matcha Nude
For the Caramel Layer:
- 3/4 cup coconut sugar
- 1 cup full-fat coconut cream (look for it near canned coconut milk)
- 1 tsp vanilla extract
For the Chocolate Coating:
- 9 oz chocolate chips
- 1 tsp melted coconut oil
- Sea salt flakes (optional, but trust us—you want this)
Directions
Prep the Shortbread Layer:
Preheat your oven to 350°F (175°C) and line an 8x8 baking pan with parchment paper.
In a bowl, mix almond flour, coconut flour, melted coconut oil, maple syrup, and Matcha Nude until it forms a smooth dough.
Press the mixture evenly into the baking pan. Use the back of a spoon or a flat-bottomed glass to get it smooth.
Bake for 15 minutes until golden. Let it cool completely.
Make the Caramel Layer:
In a saucepan over medium heat, combine coconut sugar and coconut cream. Stir until it starts to bubble.
Lower the heat and let it simmer for about 15 minutes, stirring occasionally, until it thickens.
Remove from heat, stir in vanilla extract, and let it cool for about 10 minutes.
Assemble the Layers:
Pour the caramel evenly over the cooled shortbread layer.
Place in the freezer for 1-2 hours to set.
Chocolate Coating:
Melt chocolate chips with coconut oil in a microwave or over a double boiler until smooth.
Remove the caramel-shortbread layer from the freezer and slice into bars.
Dip each bar into the melted chocolate and place it on parchment paper.
Sprinkle with sea salt flakes if desired.
Set and Enjoy:
Let the chocolate set at room temperature or pop the bars in the fridge for 15 minutes.
