Nude Chia Pudding Cups

Amazing for snacks, breakfast on the go or a healthy dessert.  I love chia pudding at all times of the day.

Do this is 2 stages. 

INGREDIENTS:

CHOCOLATE CHIA PUDDING
1 cup Blue Diamond Almond Breeze Unsweetened Vanilla Almond Milk
6-8 tablespoons chia seeds
2 tablespoons unsweetened cocoa powder
3 tablespoons maple syrup or agave
1/2 teaspoon vanilla extract Chopped dark chocolate or dairy-free chocolate for topping (optional)

MATCHA CHIA PUDDING
1 cup Blue Diamond Almond Breeze Unsweetened Vanilla Almond Milk
6-8 tablespoons chia seeds
3 tablespoons maple syrup or agave
1 teaspoon matcha powder
1/2 teaspoon vanilla extract

 

HOW TO: 

CHOCOLATE CHIA PUDDING
In a large bowl whisk together the cocoa powder and chia seeds. Slowly pour in the almond milk whisking the entire time to prevent clumps from forming. Whisk in the maple or agave syrup and vanilla extract.  Refrigerate for an hour.

MATCHA CHIA PUDDING
In a large bowl whisk together the matcha powder and chia seeds. Slowly pour in the almond milk whisking the entire time to prevent clumps from forming.  Whisk in the maple or agave syrup and vanilla extract.  Refrigerate for an hour.

Add in layers to the cups that you desire and top with fruit.
