Matcha Pesto

Not only are we blessed with Kristina as a food stylist and recipe photographer, she also likes to surprise us with incredible recipes like this one! Matcha isn't just for the sweet treats and drinks - it can be savory too!  

INGREDIENTS:
  • 1 cup Basil
  • 1/2 cup Mint
  • 1 cup Spinach (or a little more, depending on your preference)
  • 1/4 cup Walnuts
  • 2 cloves Garlic
  • Some White Onion
  • 1-1 1/2 tsp Matcha Nude 
  • Salt and Pepper, to taste
  • 1/8 cup Avocado or Olive Oil (or less, just enough to blend)
HOW TO:

1. Begin by gathering all the fresh and vibrant ingredients from your favorite local market or garden.

2. In a high-powered blender, such as a VitaMix, combine the basil, mint, spinach, walnuts, garlic, white onion, and Matcha Nude.

3. Season with salt and pepper to taste.

4. Add just enough oil to facilitate smooth blending. Blend until you achieve a luscious, vibrant green pesto.

5. Meanwhile, cook your pasta of choice according to package instructions.

6. Once the pasta is cooked, transfer it to a large bowl.

7. Spoon the Matcha Pesto over the pasta and mix well, ensuring every strand is coated in this flavorful goodness.

8. Serve the Matcha Pesto Pasta by either plating the pesto first and arranging the pasta on top using tongs or a fork.

9. Garnish with fresh basil leaves and a sprinkling of feta, Parmesan, or your favorite dairy-free substitute, if desired.

10. Voila! You have just created a Matcha-infused culinary masterpiece that's as visually appealing as it is delicious.
