Matcha Mermaid Pineapple Protein Nicecream

INGREDIENTS (makes 2 servings):

  • 2 cups cubed, frozen pineapple
  • ½ cup full-fat vanilla yogurt (vegan if desired)
  • 1 scoop vanilla protein powder (vegan if desired)
  • ½-1 cup high-protein, unsweetened legume milk (think soy, pea or flax - alternatively use any plant milk of choice)
  • 2 tsp Matcha Nude
  • ½ tsp blue spirulina (optional)
  • Toppings of choice (optional)

HOW TO:

  1. Add the pineapple, yogurt, protein powder, ½ cup soy milk, and Matcha Nude matcha to a food processor. Blend until a thick, creamy texture forms, adding more soy milk as needed to achieve your desired consistency.
  2. For the gorgeous mermaid swirl, leave half of the nicecream its natural color, and mix blue spirulina into the other half. Gently swirl them together to create that dreamy ocean vibe.
  3. Enjoy right away as soft-serve or freeze for a few hours to get that scoopable ice cream texture. Add your favorite toppings if you’re feeling fancy!
