Matcha Grinch Cookies 💚 🍵

'Tis the season to be jolly, and what better way to spread holiday cheer than with a batch of delicious Matcha Grinch Cookies? This delightful recipe not only embodies the spirit of Christmas with a tiny Grinch heart but captures the love of those that don't think they like matcha (we tested this theory out 😉). This simple yet sensational treat will have everyone singing, "Fa-la-la-la-matcha!" So, let's roll up our sleeves and get baking!

INGREDIENTS:

🍪 1 box of yellow cake mix - we used the Gluten-Free 365 mix from Whole Foods
🍪 8 tbs unsalted butter, softened - we used Miyokos Creamery dairy-free butter
🍪 2 eggs
🍪 1 tsp peppermint extract
🍪 1 tsp Matcha Nude powder
🍪 1/2 tsp vanilla extract
🍪 3 tbs tapioca starch
🍪 1/4 cup powdered sugar
🍪 Red heart sprinkles

HOW TO:

1️⃣ Preheat your oven to 375ºF and line a baking sheet with parchment paper.

2️⃣ In a large bowl or stand mixer, combine the yellow cake mix, softened butter, eggs, peppermint extract, sifted matcha powder, and vanilla extract. Mix on low speed until everything is fully combined.

3️⃣ In a separate bowl, whisk together the tapioca starch and powdered sugar. This magical mixture will give your cookies that perfect touch of sweetness and a delightful texture.

4️⃣ Get ready to get your hands a little sticky! Form the dough into approximately 14 balls (adjust the size if you prefer smaller cookies).

5️⃣ Roll each cookie dough ball in the tapioca starch and powdered sugar mixture, making sure they're evenly coated. Place them on the prepared baking sheet, leaving some space between each cookie.

6️⃣ Here comes the Grinchy heart part! Gently press a small red heart sprinkle into the center of each cookie. This will add a pop of color and a touch of love to your Matcha Grinch Cookies.

7️⃣ Bake in the preheated oven for about 13 minutes (adjust to 10 minutes if you're making smaller cookies). Keep an eye on them – you want the centers to stay soft.

8️⃣ Once out of the oven, let your Matcha Grinch Cookies cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.
