INGREDIENTS:

  • 2 cups gluten-free baking flour (this is the Paleo blend we prefer)
  • 2 tbsp Matcha Nude
  • 1/2 cup maple syrup
  • 1/2 cup melted coconut oil
  • 3 tbsp raw cashew butter
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 2/3 cup dairy-free dark chocolate chips
  • 1/3 cup dairy-free white chocolate chips

EQUIPMENT:

DIRECTIONS:

  1. Prep the Dough:

    • In a mixing bowl, whisk together the gluten-free flour, matcha powder, and baking powder.
    • Add the maple syrup, melted coconut oil, cashew butter, and vanilla extract. Stir until you achieve a dough consistency.
    • Chill the dough in the refrigerator for 30 minutes to firm up.
  2. Shape and Bake:

    • Preheat your oven to 350°F (175°C).
    • Remove the dough from the fridge, and roll it out between two pieces of parchment paper to about 1/3 inch thickness.
    • Using a Frankenstein-shaped cookie cutter, cut out 11-12 cookies.
    • Place the cookies on a parchment-lined baking sheet and bake for 10-11 minutes.
    • Allow the cookies to cool completely before decorating.
  3. Decorate Your Frankensteins:

    • Melt the dark chocolate chips and transfer to a piping bag with a small tip cut off for precision. Use this to draw and fill the wavy hair on top of the cookies and stitch marks for the mouth and sides of the heads.
    • Melt the white chocolate chips, transfer to another piping bag, and pipe two rounds for the eyes on each cookie. Dot the center of the eyes with a little dark chocolate to complete them.
