Matcha Almond Croissants

  • Day old croissants
  •  1 egg
  • ½ cup almond flour
  • 1 tbsp sliced almonds
  • 1 tsp matcha powder
  • ½ stick butter (sliced, softened - we used dairy-free butter)

  • ½ tsp almond extract
  • Pinch of salt
  • Powdered sugar for dusting 


  1. Preheat your oven to 350°F. Let's get that oven nice and toasty!
  2. Prep Your Croissants by slicing them in half lengthwise. Lay them out on a baking sheet lined with parchment paper. 
  3. In a mixing bowl make the frangipane by combining the sugar, matcha powder, almond flour, and a pinch of salt. Then, add the softened butter and whisk until creamy. Crack in the egg and whisk until everything is well blended. Your matcha frangipane is now ready to work its magic!
  4. Using a knife or spatula, generously spread the matcha frangipane onto the bottom half of each croissant. Gently place the top half of each croissant onto the matcha-frangipane-covered bottom half. Let's bring these croissants together for a flavor-packed union!
