Healthy-ish Matcha Twix Bars

Hey there, sweet tooth! Get ready to embark on a delicious adventure with our spin on the classic Twix bars, inspired by the amazing Lanina of Colorful Superfoodie's adaptation. These treats are not only guilt-free but also pack a punch of matcha goodness to keep you feeling energized.

Now, let's dive into the recipe!

INGREDIENTS:

For the matcha-infused shortbread cookie layer:

  • 2 cups almond flour
  • 3 tbsp coconut flour
  • 1/4 cup melted coconut oil
  • 1/3 cup maple syrup
  • 2-3 tsp Matcha Nude

For the luscious caramel layer:

  • 3/4 cup coconut sugar
  • 1 cup coconut cream (next to the coconut milk at the store, you can find coconut cream - make sure its FULL FAT)
  • 1 tsp vanilla extract (to make it even more irresistible)

Other goodies:

  • 9 oz chocolate chips
  • 1 tsp melted coconut oil (for that smooth chocolate coating)
  • Sea salt flakes (optional, but highly recommended for that perfect balance of flavors)

HOW TO:

  1. Preheat your oven to 350°F (175°C). Line an 8x8 baking pan with parchment paper because we're all about easy cleanup, right?
  2. Now, let's work some magic with our shortbread cookie layer. Mix together almond flour, coconut flour, melted coconut oil, maple syrup, and of course, that vibrant matcha powder until you've got a dough that's begging to be pressed into your prepared pan. Using the bake of a spoon or the bottom of a flat cup can be really helpful
  3. Once it's all evenly spread out, pop it in the oven and bake for about 15 minutes until it's golden and smelling oh-so-good. Let it cool completely while you try not to sneak a taste (spoiler alert: it's gonna be tough).
  4. While your matcha-infused shortbread layer is cooling off, let's whip up that dreamy caramel sauce. In a saucepan over medium heat, combine coconut sugar and coconut cream, stirring until it reaches a boil. Once it's bubbling away, lower the heat and let it simmer for about 15 minutes, giving it an occasional stir to make sure it's all nice and caramel-y. When it's reached that perfect gooey consistency, remove it from the heat, stir in the vanilla extract, and let it cool for about 10 minutes. Trust us, the wait will be worth it.
  5. Now comes the fun part! Once your shortbread layer is cool and your caramel sauce is just begging to be poured, spread that caramel goodness over the shortbread and pop the whole thing in the freezer for a couple of hours to set. Patience, my friend, patience.
  6. When the waiting game is finally over (we know, it's tough), take your pan out of the freezer and carefully slice it into bars of pure joy.
  7. Time to give these babies their chocolate coat! Melt those chocolate chips with a little coconut oil until they're smooth and shiny, then dip each bar into the chocolatey goodness using a fork. Place them on a parchment-lined baking sheet and sprinkle with sea salt flakes if you're feeling fancy.
  8. Admire your handiwork for a moment, then dig in and enjoy every blissful bite of these Healthier Matcha Twix Bars. Trust us, they're worth every second of effort!

So there you have it, a fun, fabulous and ingredient conscious healthy-ish twist on a classic treat that's sure to impress. Thanks, Lanina, for the inspiration – we're forever grateful to be on this creative and delicious journey with you!
