Frozen Strawberry Yogurt Matcha Cups

I love to have frozen treats on hand during the summertime! I enjoy making frozen yogurt and fruit recipes, and instead of clusters, I wanted to make adorable cups. They are dairy free and made without any refined sugars! The matcha white chocolate pairs perfectly with the strawberry yogurt filling, and the texture is so creamy.

You can enjoy them in the morning or as an afternoon snack.

What you will need

DF Yogurt – I either use a plain yogurt or the unsweetened strawberry yogurt by Cocojune.

Strawberries – We will blend some fresh strawberries with the yogurt to give it a strong strawberry flavor. We will also add a whole round strawberry slice to each yogurt cup for a fun texture. Did you know that strawberries are rich in vitamin C, fiber, and antioxidants?

Cashew Butter  I like to blend a little cashew butter with the yogurt to make the texture a bit softer. Frozen yogurt is pretty hard when frozen and the nut butter doesn’t completely freeze which is nice. You can also use almond butter instead of cashew butter.

Honey – This is what we will use to sweeten the yogurt. You can also use maple syrup or monk fruit drops instead.

Matcha There are different grades of matcha and I always use a premium grade one to ensure I’m getting a lot of health benefits! Matcha is rich in antioxidants and is more powerful than regular green tea. 

DF White Chocolate – I like to use either the chocolate chips by Pascha or the simply white chocolate bars by Evolved Chocolate.

Freeze Dried Strawberries – This is optional but if you have some on hand, it looks so pretty and adds more texture to these cups.

How to make the frozen strawberry yogurt matcha cups

First, add the yogurt, 1/2 cup strawberries, cashew butter, and honey to a blender and blend until smooth. Then pour the strawberry yogurt mixture to 12 muffins cups. Add 1 strawberry round slice to each cup and cover in the yogurt and then place the cups on a sheet pan and stick in the freezer for about to hours to set.

Next, melt the white chocolate in a bowl and then add the matcha powder and whisk until well incorporated. Take the yogurt cups out of the freezer and dip each one in the melted matcha white chocolate and the place on a parchment paper lined sheet pan. Once the chocolate has set, you can drizzle more chocolate on top and add some crushed freeze-dried strawberries. Store in the freezer, and when ready to enjoy, let it set out for 5-10 minutes before eating.

  • 2 cups dairy free plain yogurt
  • 1/2 cup chopped strawberries
  • 12 Round strawberry slices
  • 1/4 cup honey
  • 1/4 cup raw cashew or almond butter
  • 1 1/4 cup dairy free white chocolate
  • 1 tsp Matcha Nude
  • Freeze dried strawberries(optional)

Instructions

  • Add the yogurt, 1/2 cup strawberries, cashew butter, and honey to a blender and blend until smooth.
  • Pour the strawberry yogurt mixture to 12 muffins cups.
  • Add 1 strawberry round slice to each cup and cover in the yogurt.
  • Place in the freezer for 2 hours to set.
  • Melt the white chocolate in a bowl and then add the matcha powder and whisk until well incorporated.
  • Take the yogurt cups out of the freezer and dip each one in the melted matcha white chocolate and the place on a parchment paper lined sheet pan.
  • Once the chocolate has set, you can drizzle more chocolate on top and add some crushed freeze-dried strawberries.
  • Store in the freezer, and when ready to enjoy, let it set out for 5-10 minutes before eating.
