The Ultimate Chocolate Covered Matcha Almonds: Your New Go-To Snack

Alright, snack lovers, gather 'round! Have you ever picked up a fancy snack at the store, flipped it over, and seen an ingredient list longer than your last grocery receipt? Yep, us too. So, we decided to take matters into our own hands and whip up something just as fancy but way healthier: Instead of 20+ ingredients, most if which you can't even pronounce, we used just 3 to make your new favorite snack! These little bites of heaven are gluten-free, dairy-free, and can be refined sugar-free, depending on the chocolate you choose. Trust me, you'll be munching on these non-stop!

What You'll Need (aka Ingredients):

  • 1 cup lightly roasted whole almonds - check the ingredients though and make sure they are SIMPLE! 
  • 1 1/2 cups dark chocolate chunks (We are 💯 bias towards Hu Kitchen gems because they only contain coconut sugar, cacao and coconut butter)
  • 1-2 tsp Matcha Nude

Let's Get Snacking! (aka Instructions):

  1. Prep Your Tray: Line a baking tray with parchment paper or a nonstick baking mat. Trust us - this will make everything, including clean up so much easier.
  2. Melt that Chocolate: You can go the microwave route or a double=boiler method on the stove top. For the microwave, heat it in 30-second intervals, giving it a good stir each time until it's smooth and melted. You might be surprised how much more the chocolate will melt as you stir. Do this so you don't burn the chocolate. 
  3. Coat Those Almonds: Now, dunk those almonds into the melted chocolate. Make sure each almond is fully coated. We found it easiest to use a fork to fish them out and transferred them to a second fork to release more of the excess chocolate. Then immediately place on lined baking tray with a little space between each one.
  4. Chill Time: Pop the tray in the fridge for about 30 minutes. This hardens the chocolate and makes the next step easier. We know it's hard to be patience, but it will be worth it.
  5. Matcha Dusting: Once the chocolate is set, it's time for the matcha magic. Use a sifter to evenly dust the almonds with matcha powder. Alternatively, you can put the almonds in a bowl with a lid and give it a good shake. To be totally honest, we did both 😆 

And voila! You’ve got yourself a batch of the most addictive, simple + chocolatey  snack ever. These Matcha Dusted Chocolate Almonds are perfect for satisfying that sweet tooth without any guilt. Plus, they’re vegan, gluten-free, and if you use the right chocolate, refined sugar-free too.
