For the Yogurt Filling:
- 2 cups dairy-free plain yogurt (or unsweetened strawberry yogurtโwe love Cocojune!)
- ยฝ cup chopped strawberries ๐
- 12 round strawberry slices (for texture and visual appeal)
- ยผ cup honey (or maple syrup/monk fruit drops for a vegan option)
- ยผ cup raw cashew butter (or almond butter for an alternative)
For the Matcha Coating:
- 1ยผ cups dairy-free white chocolate chips (we love Pascha or Evolved Chocolate) ๐ซ
- 1 tsp Matcha Nude ๐ต
Optional Garnish:
- Crushed freeze-dried strawberries (adds texture and flair)
Directions
Make the Strawberry Yogurt Mixture
In a blender, combine yogurt, ยฝ cup chopped strawberries, cashew butter, and honey until smooth and creamy.
Fill the Muffin Cups
Pour the mixture evenly into 12 muffin cups.
Add one strawberry slice into each cup and gently press it down.
Place the cups on a sheet pan and freeze for 2 hours to set.
Prepare the Matcha White Chocolate Coating
Melt the white chocolate in a microwave or double boiler.
Whisk in 1 tsp of Matcha Nude until smooth and fully combined.
Coat the Yogurt Cups
Once the yogurt cups are set, carefully dip each one into the matcha white chocolate mixture. Place them back on a parchment-lined baking sheet.
Add the Final Touches
Once the chocolate sets, drizzle extra matcha chocolate on top.
Sprinkle with crushed freeze-dried strawberries for a pop of color and texture.
