Ingredients
For the Base
- 1 cup almond flour
- 1 cup shredded unsweetened coconut
- 1/4 cup coconut oil, melted
- 2 tbsp maple syrup
- 1 tsp vanilla extract
For the Matcha Mint Layer
- 1 cup coconut cream (the thick part from a chilled can of coconut milk)
- 1 tbsp Matcha Nude
- 2–3 tbsp maple syrup (adjust to taste)
- 1/4 tsp peppermint extract (or 1 tbsp finely chopped fresh mint)
Optional Toppings:
- 2 oz dark chocolate, shaved or melted
- 1 tbsp shredded coconut or matcha powder for garnish
Directions
Prepare the Base:
In a mixing bowl, combine almond flour, shredded coconut, melted coconut oil, maple syrup, and vanilla extract. Stir until a sticky dough forms.
Press the mixture evenly into a parchment-lined 8x8-inch baking pan. Use the back of a spoon or spatula to smooth it out. Place in the freezer to firm up while you prepare the next layer.
Make the Matcha Mint Layer:
In a medium bowl, whisk together the coconut cream, matcha powder, maple syrup, and peppermint extract (or fresh mint). Adjust sweetness or mint flavor to your liking.
Spread this mixture evenly over the chilled base layer. Smooth it with a spatula and return the pan to the freezer for about 1 hour, or until firm.
Optional Chocolate Topping:
Drizzle melted dark chocolate or chocolate shavings over the chilled bars. Garnish with shredded coconut or a light dusting of matcha powder for an extra pop of color.
Cut and Serve:
Once fully set, remove the bars from the pan using the parchment paper. Slice into 8–10 bars or squares.
Store in the fridge or freezer until ready to enjoy.
