Ingredients
- 1 cup raw cashew or almond butter
- 1 ¼ cups almond flour
- 3 tbsp coconut flour
- ½ cup vanilla protein powder
- 2 tbsp + 1 tsp melted coconut oil
- 2-3 tbsp maple syrup
- 1 tsp almond extract
- 1 tbsp Matcha Nude
- 1 ½ cups dairy-free white chocolate chips
- Natural Christmas sprinkles
Directions
- Prepare the Dough: In a mixing bowl, combine the cashew butter, 2 tbsp melted coconut oil, maple syrup, and almond extract. Stir until smooth.
- Add the Dry Ingredients: Gradually mix in the protein powder, almond flour, and coconut flour. Stir until you achieve a cookie dough consistency.
- Chill the Dough: Place the dough in the fridge for 15 minutes to firm up slightly.
- Form Truffles: Roll the chilled dough into 14 balls and arrange them on a parchment-lined baking sheet. Freeze for 30 minutes.
- Melt the Chocolate: Melt the dairy-free white chocolate chips with 1 tsp coconut oil in the microwave (30-second intervals) or using a double boiler.
- Add the Matcha: Sift the Matcha Nude matcha into the melted chocolate and stir until evenly combined.
- Dip and Decorate: Dip the chilled cookie balls into the matcha-infused chocolate, ensuring each is fully coated. Place them back on the parchment-lined sheet and sprinkle with festive decorations.
- Set and Serve: Let the truffles set completely before serving. Enjoy the perfect bite-sized holiday treat!
